Student cookbook: Mushroom melt

A tasty toastie for one. It's worth keeping a pack of frozen mushrooms in the freezer for odd dishes like this, though you can obviously use sliced fresh ones. Preheat your grill. Heat a couple of tbsp of oil in a frying pan, add a small crushed clove of garlic if you fancy it, stir, then tip in a mugful of mushrooms. Stir-fry until any liquid disappears and the mushrooms start to brown. Toast and butter a slice of bread, pile on the mushrooms, then lay a few fine slices of cheese on top (brie's good for this but cheddar is fine). Flash the toastie under the grill until the cheese is bubbling.
