How to knead dough

Tidy the dough into a manageable round on a floured board Photograph: Peter Cassidy/Kyle Cathie Stretch the dough away from you while holding on to the end closer to you Photograph: Peter Cassidy/Kyle Cathie Roll the top edge of the dough inward towards and press away again with the heel of your hand. Again roll towards you, another stretch and a final roll which should bring all the dough as far as the bottom edge of the board. Now you'll have what looks like a Swiss roll in front of you, so turn it 90° and start the kneading process again from the narrow end.
