Spicy sausage stew recipe

Sausages are the ultimate student food because they're so easy to cook and not too expensive. Instead of having them with mash and peas, try this spicy stew recipe. It's ideal for the winter months and a great one pot dish for a large number of people. Prep and cook time: 20 minutes Serves 4 Costs: £6 Difficulty: Very easy 8 good quality spicy pork sausages 3 medium onions finely sliced 1 pinch of dried herbs, rosemary or thyme 2 cloves of garlic, crushed 2 400g tins of tomatoes Olive or sunflower oil Salt and freshly ground black pepper In a frying pan, pour a dash of olive or sunflower oil. Add the sliced onions and garlic and sauté until soft. Season with salt and pepper and when ready remove from the pan. Add another dash of oil to the pan and colour the sausages on all sides before adding the other ingredients. Cover and simmer for 10 minutes until the sauce has thickened. This recipe can be spiced up with Tabasco and dried chilli flakes and can be served with mashed potatoes.
