Using up leftovers
The word leftovers has a dreary ring to it, but think of them as a meal you don't have to pay for or cook from scratch. If you have more than you need for one meal, set aside the rest when you dish up – rather than leaving it temptingly on the table when it will almost certainly get scoffed, or worse, thrown away. Wrap it up and pop it in the fridge as soon as it's cool rather than leaving it overnight – it might give you food poisoning the next day. It's always worth cooking extra potatoes or rice for a hash, frittata or egg-fried rice (always better made with chilled rather than warm rice).
