Student cookbook: Apple and forest fruit compote

Frozen berries are brilliant when fresh ones aren't in season, or if you can't afford to buy them fresh. This simple berry compote is also very quick. Serves: 4 Cooking time: 15 mins 1 large bramley apple or 2 smaller apples (bramleys are best for cooking because they break down well) 250g mixed frozen berries 2-3 tbsp sugar and 3 tbsp water Yoghurt and granola to serve Peel, quarter, and core the apple. Slice it into a saucepan. Add the berries, sugar and 3 tbsp of water, stir, put a lid on the pan – or cover with foil – and bring to the boil. Simmer for about 7-8 minutes until the berries have completely thawed and the apple has turned into a puree. Check for sweetness, adding extra sugar to taste. Leave it to cool, if you've got time, then serve with a good dollop of yoghurt and a sprinkling of granola. Tip: You can also have this compote with custard, cream, or use it as a crumble base
